I then copy images (from different sources, sizes, etc.) and paste them one by one into a cell. Once inswerted the cell expands to the size of the image inserted.

If you don't specify the row height, or set it to "At least" some amount in the Row tab of the Table Properties dialog, Word will autofit the row height automatically. If you set the row height to "Exactly" some amount, Word won't autofit row height because you explicitly told it not to. So there is no need for an "Autofit row heights" option.
