I’ve adjusted my recipe to accommodate for that in the Wellington itself, but I need a sauce to go with it, but bordelaise and Demi-glacé are not options.

The bottom of the Wellington or any filled puff pastry is never going to look the same as sides or top. The weight of the ingredients on top of it is going to prevent it from expanding into flaky layers.
