Leftmost cost is if the SAN check succeeds, rightmost is if it fails. I normally, when it says roll 1d3, roll 1d4-1. So, I roll the d4 and take one from the total, unless I rolled 1. The smaller the SAN loss, the less damage it really does, akin to having a very, VERY nasty fright.

This is the right answer. A Silvanshee Agathion, for example, will normally never be able to deal more than 1 nonlethal damage with any of its attacks (1d3-4 and 1d2-4, respectively).

If you can maximize mobility, either spell can slowly whittle almost any creature's HP to 0 and then coupe de grace with a Scythe (x4 crit) as long as the creature has no energy resistance/regeneration.
