First of all, he sells it on a wine bottle (the light that goes through it will destroy the product very fast) and he has no control on the production. He says that his product (immense batches from all over the world) have high polyphenols.

I guess you also pay for the testing they do and additional guarantee. Maybe Bryan has some sort of arrangement such that he gets a higher quality press as well, which is definitely possible considering the variety of olive oil that farm seems to sell. Even olive oil from the same place can have differences in quality I suppose.
