Don't allow other pawns to cast spells or anything that could liberate the cyclops (you can even grab them to interrupt whatever they do, or just hire more striders). When the strider is already trying to cut the eye, aim the head and use explosive rivets (with the enhanced version of this skill by wearing the corresponding ring if possible).

This is my third playthrough and nobody's ever mentioned a Cyclops. Talked to Ophis and she gave me the quest to kill 10 bandits. There are no additional objectives. Wiki says that Betiah asks you to feed the cyclops but she just tells me Ophis would prob speek to men if they were dressed like women. I've exhausted her and Ophis's Dialogue options.

Jump on it's back, between the shoulders, a little below the neck where it can't reach. It'll try to grab you off, and knock it's own helmet off. This method works 100% for me. You can also grab onto it's head, and jump as it tries to grab you.
