Enniatins are a class of organic chemical compounds found in Fusarium fungi. They appear in nature as mixtures of cyclic depsipeptides. The main variants are enniatin A, A1, B and B1 together with minor amounts of enniatin C, D, E and F.

Mycotoxin enniatin B (ENN B) is a secondary metabolism product by Fusarium fungi. It is a well-known antibacterial, antihelmintic, antifungal, herbicidal, and insecticidal compound. It has been found as a contaminant in several food commodities, particularly in cereal grains, co-occurring also with other mycotoxins.

Enniatins (A, A 1, B and B 1) belong to a group of cyclodepsipeptides and are produced by F. avenaceum, F. oxysporum, F. poae and F. tricinctum (Gruber-Dorninger et al., 2017) and are prevalent in grains and grain products, especially Enniatin B.
