Experiments were performed in a pilot-scale freeze dryer (Armfield, FT 33 Vacuum Freeze Drier, UK). The red pepper pulp samples were frozen at − 40 °C in an air blast freezer (Frigoscandia, Helsinborg, Sweden) for 2 h, then freeze-dried under vacuum (13.33 kPa absolute pressure), at − 48 ± 2 °C condenser temperature.
