2014年3月7日 · You should be loosing 45 /50 % weight if it is dried properly. Two, you are not allowing the jerky to get to ambient temperature before vaccume sealing the bag. The problem is probably # 2. The moisture doesn't hurt a thing. It,s just a cosmetic issue. My sweet and smokey jerky when vacuum sealed leaves a sticky moisture in the bag.

But after vacuum sealing the packs and eating later, the beef is wet. Any way to keep it from being wet? Am I not dehydrating enough. Thanks for any thoughts.
