The other varieties are Khai (Odia: ଖଇ) (fried paddy) and Ukhuda (Odia: ଉଖୁଡ଼ା) [3] (fried paddy sweetened by jaggery). It is a form of puffed rice (Rice puffs while roasting it with heated sand) which is added with jaggery syrup.
