Purely since when it's a three, it just defaults to Bakugo and Deku being at the forefront. Whether they interact as a trio in-story doesn't matter. It's all about merchandising and marketing. Just look at all the MHA promotional material that feature Deku, Bakugou, and Todoroki together like that 3 Musketeers Promo for the 3rd Movie. It's all about capitalizing on the 3 most popular characters in the series and pushing them as a trio.

IMO Tamaki is the weakest because his quirk isn't as consistent as the other 2 and he can't just become any animal he wants he has to eat them first meaning he can only really gain the traits of animals that are easy to find the meat of and it wears off at the end of the day so he'll probably end up using the same traits all the time.

Each of these events is the true origin story for the characters. Sorta like Uncle Ben and Spider-man. In other words the day they final put their all into being a hero. As to why they're called the "Origin Trio", I have no idea. Odds are there will be at least 1 or 2 more Origins in the story.
