If you go to Character Viewer, View=Roman, Category=Digits and select the zero and go down to the Font Variation pane, you can see which fonts which have it with a slash.

Adding a font that included the slashed 0 in Gmail would be fine but I don't believe there is a such as font that has the baked in slash 0 available in Gmail or Sheets. With Google as a tech company it would seem more developers and IT users would need this.
