My theory: zzzzz was the best simple, memorable spelling that wasn't already taken. Additional theory: you sleep at the end of the day. Z is at the end of the alphabet. It's kinda symbolic: you've had such a 25-letter day of activity, that all that's left is zzzzz. Final thought: I'm not American, and i call this letter 'zed'.
