2010年8月12日 · The burner used in the EDGE ovens is different than what other manufacturers are using. We have always used the i-HEAT modulating gas burner in our ovens. This burner allows us to modulate both the gas and combustion air. Each model of oven has an air to fuel algorithm that is designed to be very efficient in each particular oven model.

2007年3月26日 · The MM ovens aren’t very efficient at all, possessing a vent on the back of the oven that constantly blows out hot air (I never understood why that air didn’t blow on the pizzas). As far as the Lincoln’s are concerned, I just fell in love with the bake of the product.

2010年8月5日 · Oven Heat vs AC is crazy and here in NJ last month, most of the days were pushing 100 degrees outside and we could only get our place cooled to 88 inside! Our customers were sweating and that’s not good! Air was turned off at night but we then walked in to a sauna in the morning and then the AC worked twice as hard trying to get it cool all day.

As to size of the hood be it deck or conveyor. The hood on any oven must overhang the oven by at least 6 in on any side that is not closed off by a wall or an end panel.
