I think it's more accurate to say it's generally accepted that there were volcanoes in Valyria, and that the Doom included active eruptions. I do not believe most people think that the Doom of Valyria was just -or based on- erupting volcanoes. More like, something happened - I believe something mega happened- and volcanoes were involved.

Since the Doom has many different descriptive aspects, it's likely Valyria sat on a fault zone and eventually the natural pressures became too much, resulting in combined catacysmic earthquakes and volcanic eruptions.
