Amaranth is an anionic dye. It can be applied to natural and synthetic fibers, leather, paper, and phenol-formaldehyde resins. As a food additive it has E number E123. Amaranth usually comes as a trisodium salt. It has the appearance of reddish-brown, dark red to purple water-soluble powder that decomposes at 120 °C without melting.

2010年7月26日 · The European Food Safety Authority’s scientific Panel on additives, the ANS Panel, has assessed the safety of the red food colour Amaranth (E123), completing the re-evaluation of all azo dyes[1] authorised for use in the European Union[2] . EFSA’s scientific advice will help to inform decisions of EU risk managers in relation to food additives.

In that opinion, the Panel concluded that the anticipated dietary exposure of the adult population at the high level (97.5 th percentile) may exceed the Acceptable Daily Intake (ADI) for amaranth (E 123) of 0.15 mg/kg body weight per day.
