Montali’s gourmet vegetarian cuisine has been widely recognized and praised over the years. By 2005, Malu and Alberto were asked to write a book that captured the aromas, flavours, textures, and the ingredients of Umbria; and of their particular cooking style that combines vegetarianism with Brazilian and Italian gastronomies.
