Pagash, pagach, or pagac —is a food made of mashed potatoes, dough, and cheese. It may also include cabbage in addition to the potatoes. It originated as a Lenten dish in Slavic regions. It is popular in Northeastern Pennsylvania and Southwestern Pennsylvania, which has been shaped by the large population of Catholic immigrants from those regions.

Place potatoes in large bowl and mash; add onions, salt, pepper, cheese, and milk, blending well. Prepare roll mix according to package directions, except divide dough in half. Roll out bottom section and place on cookie sheet. Pile potato mixture on dough, leaving about a 2" margin around the edge.

In a large bowl, mix 1-1/2 cups of the flour, 2 tablespoons sugar, and the 1/2 teaspoon salt. Make a well in the center; stir in egg. Heat milk to 100F and stir into flour mixture. Stir in 2 tablespoons melted margarine and the oil. Stir in yeast mixture. Using a spoon, stir in as much of the remaining flour as you can.

I've had Pagach two different ways: one with the potatoes stuffed between a top and bottom crust, and one with just a bottom crust with the potatoes spread on top.
