Crispy Tofu (makes extra): 250g firm organic tofu 1 cup bread crumbs of choice 1/4 cup flour of choice 1/3 cup water Pinch of salt, pepper and chilli flakes Enough cooking oil to shallow fry Sauce: 1 1/2 tbsp soy sauce 1/2 tbsp maple syrup 2 tbsp peanut butter 1 tsp vegan tom yum paste (optional, swap with chilli oil) 1 tsp sesame oil 1/2 tbsp rice vinegar 1 serving noodles (I used spelt noodles)
