Easy Eggplant Parmesan

This is the eggplant Parmesan of my dreams. It's lighter, less oily, less heavy, easier and quicker, and still beyond delicious! The trick is to not bread each slice of eggplant, roast them instead of frying, use cheese only on the top layer and just a thin layer of breadcrumbs on top. So good.
