Gumbo is a history lesson in a bowl. Gumbo is a soup consisting of a stock, meat or shellfish, okra or filé powder, and the Creole holy trinity - celery, bell peppers, and onion. The typical starting point for gumbo is to slowly build a dark French roux, using oil and flour.
